Welcome to Jimmy's Hog Pen Bar B-Que, all of our products are cooked low and slow
in the true tradition of BBQ using seasoned hickory and apple wood. Please note that
on larger cuts of meat such as brisket and pork a dark almost black crust develops,
this crust is commonly referred to as bark and is where much of the flavor is concentrated.
In addition to bark some meats will be pink, a trademark when cooking low and slow
with smoke.
Remember, real Bar B-Que is braggin' food.
